Oatmeal Walnut Cookies

I’ve been away from The Baking Bud since last 2 months. Finally I’ve started baking again. All the reading and reviewing leaves me drained out and incapable of being able to stand in the kitchen and bake. If I’m not posting anything here, then you’ll find me at my book blog The Reading Bud.

Coming back to today’s topic, Oatmeal-Walnut Cookies are one of the most delicious and also healthy cookies. These are power packed bundles of sweetness which give you energy instantly. On a sad day, have some of these with a glass of cold milk and forget all your worries.

They look as well as taste delicious. Try them out and let me know how they turn out. Feel free to ask any doubts in the comments section 🙂

  • Butter: 1/2 cup, softened
  • White Sugar: 1/2 cup
  • Brown Sugar: 1/2 cup, packed
  • All-Purpose Flour: 1 cups
  • Baking Soda: 1/2 tsp
  • Walnuts, crushed: 1+1/4 cups
  • Eggs: 1
  • Vanilla Essence: 1/2 tsp

  1. Cream butter and sugar till pale and fluffy.
  2. Add vanilla essence and egg and beat again.
  3. Sift together flour and baking soda and add them to the above batter in 3 batches.
  4. Beat on low speed till nicely incorporated.
  5. Fold in the walnuts.
  6. Keep in fridge for at least 30 minutes in an air-tight container.
  7. Pre-heat the oven at 180°C
  8. Divide the cookies into 20 equal sized balls and place them on lined cookie-sheet/tray and bake for 9-10 minutes.
  9. Leave them on the sheet for another 2 minutes.
  10. Transfer to a wire rack and let them cool completely before storing.

  1. Do not bake the cookies for more that 12 minutes, even if they appear to be undercooked.
  2. The prepared cookie dough can be kept for over a week in fridge.
